Brine in Minute Maid lemonade (>18 hours for tenderness, >48 for lemon flavor).

Let rub set for 30 minutes.

Smoke for 2 hours at 225F (2.5-3 hours for whole chicken), sauce 30 minutes before removal.

Use KitchenAid stand mixer, on lowest speed, to quickly shred smoked chicken breasts without burning yourself. Use the coated flat beater attachment (it's dishwashable along with the bowl).

Use smoked chicken in chili (vacuum seal and refrigerate for 2 weeks for enhanced smokiness).

FRIED CHICKEN & WAFFLES

Trim and cut the chicken, e.g. butterfly, strips, or nuggets.

Add 1/3 cup of any All-Purpose Rub to 1 cup of buttermilk.

Thoroughly submerge the chicken.
