S&G BBQ METHOD

  1. Remove white skin (cut over a bone, remove with paper towels).

  2. Brine, in Cherry Dr. Pepper, for 18 hours (24 hours for best results). Use Cherry Dr. Pepper or Barq's Root Beer for beef ribs.

  3. Apply rub (shake off excess) to both sides while smoker heats up, 1 hour, or 24 hours for best results.

  4. Smoke at 225F.

    1. Start bone side down.

    2. Optional: At the 1.5 hour mark, place ribs bone side up for 1 hour.

    3. Optional: Sauce at the 2.5-hour and/or 3-hour marks.

    4. Pull from smoker at the 3.5- or 4-hour mark.

  5. Let set for 1-3 hours.

3-2-1 METHOD (STANDARD)

This is the more common method. Let us know if you prefer this method or our house method.

  1. Remove white skin (cut over a bone, remove with paper towels).

  2. Apply rub to meat side for 1 hour (24 hours for best results).

  3. Smoke at 225F.

    1. Start bone side down.

    2. At the 3-hour mark, wrap with foil or butcher paper.

    3. At the 5-hour mark, unwrap and apply the sauce (optional).

    4. At the 5.5-hour mark, apply more sauce (optional).

    5. At the 6-hour mark, remove from the smoker.

  4. Let set for 1-3 hours.
