Leftover Soup

LEFTOVER SOUP
This recipe adds variety to eating leftover smoked meat. This recipe can be multiplied.

2 carrots peeled and sliced thin

2 celery branches sliced thin

Onion (thin slice of yellow or white then diced; or 3 branches of green onions sliced thin)

32 oz. chicken broth - reduced sodium

2 tbsp. sesame oil

1 tbsp. soy sauce

1 tsp ground ginger

2 garlic cloves

Meat:

Chicken

Pork

Brisket (trim and then air/pan-fry to add texture as the bark may be crunchy and to reduce fat in the soup)

Add 2 tsp of beef bouillon or 2 cubes

Combine and cook for at least 30 minutes.

Garnish with cilantro.

Additional Tips:

We like the vegetables and meat to be thinly sliced or shredded to get each ingredient on every spoonful.

Choose your portion of meat. This recipe is meant to feed 2 people, as a meal, or 4 as a side dish.

Pepper can be added to taste; broth, soy sauce, and bouillon may be enough salt.

Use the "Hearty Soup" setting on Ninja Hot and Cold Blender.

Add potatoes (fresh or air fried) for heartiness and texture.
